- 3 Cups of American long grain rice
- 6 Eggs (Hard boiled)
- 1 Ib Smoked haddock, or cod
- 2 Middle sized onions
- 2 Cloves garlic
- Cayenne peppr, Cumin
- Olive oil
- Double cream
Chop the onion up quit small and the garlic very fine and cook in olive oil and butter until translucent, add crushed pepper corns and some salt and a little cumin.
Cook the rice in this mixture, adding water and stirring from time to time. This will tke 15 minutes or so.
Meanwhile, put the fillets of fish in a low baking dish covered with milk and cook in the oven for 20 minutes then flake carefully awy from the bone and discard bones and skin.
Shell the hard boiled eggs and throw away three of the whites then riughly chop the remaining three whites and six yolks.
Very gently mix all the cooked ingredients together with some of the milk that the fish was cooked in and put it in an oven proof dish, pour over 1/4 of an hour.
NB Don´t be fooled into believing that salmon would make a richer and better kedgree – it doesn´t.
